In our last deep dive, we pulled back the curtain on why 100% grass-fed butter (like Kerrygold or Aldi’s Irish Butter) blows cheap, grain-fed store brands out of the water. But if you walk further down the natural food aisle, you’ve likely seen jars of Ghee—often called "liquid gold." Is ghee actually better than grass-fed butter? How does it react to high heat? And does the diet of the cow still matter when you're buying ghee? Here is everything you need to know about butter versus ghee, the difference between grass-fed and grain-fed ghee, and how to choose the right fat for your health.
1. What Is Ghee and How Is It Made?
Ghee (often referred to as clarified butter) has been a staple in traditional Indian cooking and Ayurvedic medicine for thousands of years.
To make ghee, real butter is simmered over low heat until the water completely evaporates and the milk solids (lactose and casein) separate from the pure butterfat. The milk solids are allowed to lightly brown at the bottom of the pan—giving ghee its rich, nutty aroma—and are then completely strained out.
What’s left is pure, 100% butterfat.

While both come from cow’s milk, the process of making ghee creates three huge advantages over regular butter:
